Strawberry Lemonade Popsicles
Lemonade and popsicles, can there be two better representations of summer?
We are in the dog days of heat and humidity here in beautiful NC. It has been insanely hot. The air conditioner is working as hard as it can. The ceiling fans are all running at full blast and trips to sit in the pool have been many. But… by the end of the day everyone in our family is looking for a sweet, cool treat to help us beat the heat. Popsicles are the perfect bite for that task.
Strawberry Lemonade was the inspiration behind these pops. To me, there is no more perfect representation of summer than a tall, icy glass of lemonade. My first taste of strawberry lemonade perfection was at The Cheesecake Factory. Their strawberry lemonade is amazing! It is tangy and sweet with bits of fresh strawberries floating throughout. Yum!
That perfect glass of strawberry lemonade provided the muse for these Strawberry Lemonade Popsicles. In an attempt to provide a healthy balanced treat, these pops get most of their lemony taste from Lemon Greek Yogurt. We used Noosa brand yogurt. There was a delicious lemon curd in the yogurt. I highly recommend this brand if you can get it! The fresh bites of strawberries are refreshing and delicious.
The family loved them and they were a breeze to make. That makes these a total win in my book. You’ll want to make these for your family!
- 1 lb. of Strawberries, cleaned and headed
- ½ Cup Heavy Whipping Cream
- ½ Cup Lemonade
- 1 Tbsp. Honey
- 1 ½ Cup Lemon Yogurt
- In a food processor (a blender would work as well) combine whipping cream, lemonade, and honey until the cream has thickened. When your cream has thickened, add strawberries to the food.
- Working in layers, add in your strawberry whip and lemon yogurt to the popsicle molds. Place pops in freezer and let set up for 6-8 hours. To unmold, let sit at room temp for a few minutes and then wiggle them right out.
