After the incredibly disappointing loss of our families team in the playoff’s, we no longer have a horse to cheer for in the big game.  The way I see it, we can either pretend that the NFL just decided that there was no team good enough to hold the game this year, but I don’t have an imagination strong enough for that, or focus on the perfect game day bites and hope for some really funny commercials.

I think we all knew that option 2 had me all along.  Seriously, who can resist dancing babies and buffalo chicken bites?

These empanada’s are my gift to you, they are always a crowd pleaser.  Your family will thank you, your in-law’s will think you are wonderful, and if we could get everyone around the same table, may even create world peace!  Ok, I may have gotten a little carried away with that last one, but I can honesty say they are tasty.  The best part is that by taking a short cut, using store bought pie dough, they are also quick and easy.  These empanada’s can be made ahead and frozen until the day you need them.  I love this option.   No need to work right until my guests come and no dirty kitchen that we need to scramble to clean before the guests arrive.

My brother loves Buffalo wings in all their shapes, sizes, and flavors.  He loves them so much in fact, that he has perfected how to eat them.  He places the wing between his teeth and slurps and slithers it through his mouth until the only thing that remains are the bones.  It was straight up nasty to watch.  No one needs that at their big game party.  These buffalo chicken bites provide all the flavor and taste of a buffalo chicken wing without the fuss and bones.  They are a perfect small bite party food.

Of all the choices on this list this is by far my first choice every time.  I love the freshness of this dish, the heat from the meat and the salsa, the smooth creamy crema, and the pop of the zesty lime.  This is a dish I have been known to crave and one that is so easy to put together.  Guests always enjoy this, because who doesn’t love taco’s?
