Chocolate Chip Banana Bread

My children have all, spent their childhood either on a chair pulled up to the counter top, sitting at the kitchen table, or sitting on the counter top itself to help me cook.  Each of them have taken their turn learning how to slice and dice, stir, and the most important skill of all….learning how to lick a mixing bowl clean.  (I know that is frowned upon, but I have licked more than my fair share and here I sit.  Please no hate mail!  You know you’ve done it too!)

Having kids in the kitchen isn’t always easy.  There have been times when I have lost my patience, my mind, and my sanity all while making dinner.  There were times when we would all happily begin a dish, only for me to loose my mess and toss them all in nap time.  However, I now stand here with three teenagers, who can cook for me!!!

Recently, my oldest has been on a major baking binge.  Her quest has been to bake the perfect loaf of banana bread.  She has tested and tried many different recipes and has come up with the 4 must’s to get the perfect loaf of bread.

  1. It MUST be moist!
  2. It MUST have chocolate in it!  (this must really is a qualification from my youngest, but who am I to disagree with chocolate)
  3. It MUST have walnuts!  (My oldest really doesn’t love walnuts, but there is something extra special with a loaf of banana bread that has the crunch of nuts sprinkled through it)
  4. It MUST be banana’y!  (To get this, your banana’s have to be just a step above liquified.)

These are the 4 commandments of Banana Bread baking according to Emily.  I have to admit that I agree with each and every commandment.

Her next step in the process was to perfect the recipe.  This has been a delicious process and one that I am so proud to tell you is all her own!!  (Can you feel my Momma Pride???)

Putting It All Together:

Step 1:  Combine flour, baking soda, and salt together in a bowl and set aside.
Step 2:  In a mixer, whisk together  egg, sugar, and oil.  Once that is combined, slowly begin to add in your dry ingredients.  The mixture will be on the thick side and slightly dry.
Step 3:  Slowly add in milk, vanilla, almond extract, and banana’s.  Allow the mixture to completely come together.  Finally you can add in chocolate chips and walnuts.
Step 4:  Pour your batter into a loaf pan that has been sprayed with cooking spray.  Top the whole loaf with cinnamon sugar mixture and bake.

My absolute favorite way to enjoy this bread is first thing in the morning with a cup of coffee, even better if one of my chicklets bring it to me in bed.  Your family will love this recipe and you will love how easy it is to throw together.

TIP:  Don’t throw away your banana’s that have gotten too brown to enjoy.  Squeeze the banana into a ziplock bag and freeze until you want to make some of this bread.  We freeze three to four bananas, enough to make one batch of bread, to a bag.  When we are ready to make up a loaf, we take the bag out and thaw the bananas for a little while before mixing.  Try this tip and you will never waste another brown banana.

Chocolate Chip Banana Bread

Prep Time: 15 mins
Cook Time: 55-65 mins


  • 2 cups flour (To make GF we used Cup 4 Cup GF flour)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup sugar
  • 1/2 cup vegetable or canola oil
  • 2 tablespoons buttermilk or milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 3 bananas mashed fine
  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chips
  • Cinnamon sugar mix for top of bread (3 Tbsp. Sugar mixed with 2 tsp. cinnamon)


  1. Heat oven to 325°F
  2. Add flour, baking soda and salt to a small bowl and set aside.
  3. In a mixer; combine egg, sugar and oil and stir until well combined.
  4. Add the dry ingredients to the wet and stir well. The mixture will be thick and dry.
  5. Next add milk, vanilla, almond extract and bananas and stir until incorporated.
  6. Mix in walnuts and chocolate chips and pour into a loaf pan. Top with cinnamon sugar mix.
  7. Cook 55-65 minutes
