Pimento Cheese Dip

“I wasn’t born in the South, but I got here as fast as I could”

I was born and raised a northerner, much to my dismay.  From the time that I was a little girl, the allure of being a true, sweet-tea drinkin’, porch sittin’, talkin’ with a twang southerner has captivated me. (southerners are too cool for “g’s”)

My grandparents lived in the middle of the Ozark Mountains in Arkansas.  For me that was close enough in my lineage for me to qualify myself as a southerner.  I have longed to move to the South for the majority of my life.  It called to me.

When we finally moved to NC a few years ago, it felt like coming home!  These were my people (insert the “Hills Are Alive” pose), this was my beautiful land, and I could totally get behind some southern food.

In fact I have totally gotten behind some southern food.  Someday when I am able to discuss the greatness that is Collard Greens, we will have that discussion, but probably the greatest southern delicacy that has reached right in and grabbed my taste buds, has been Pimento Cheese.


I am crying a little at the fullness this cheese has brought to my life.  It is hard to fathom that I had never even heard of its greatness until 3 years ago.  Mind boggling.  Pimento Cheese can be had in every grocery store in the South.  It is considered a true staple!  But when the craving for some Pimento cheese dip hits, who wants to have to get in the car to go get it?  Not only that, and I may be partial here, but I think homemade tastes soooooooo much better.

So if you are interested in tasting a little bit of the South in your mouth, you must try this dip.  Run, don’t walk, to your kitchen and in less than 5 minutes you could be noshing on deliciousness.

I recently went to a picnic, hosted by southerners by born and bred.   My contribution to the picnic was this pimento cheese dip.  The bowl was licked clean.  The next day my phone was dinging for this recipe.  They didn’t even care that it came from a southerner wanna-be.  I don’t mind telling you that it warmed the cockles of my heart a little bit.  So because I love ya and because I think everyone needs a little pimento cheese dip in their life, here is the recipe.

Pimento Cheese Dip

Prep Time: 5-10 mins


  • 1 Cup Cheddar Cheese
  • 1 Cup Pepper Jack Cheese
  • 1 8 oz. Block Cream Cheese, softened
  • 1/2 Cup Mayonnaise
  • 1/4 tsp. Garlic Powder
  • 1/4 tsp. Onion Flakes
  • 1/4 tsp. Cayenne Pepper
  • 1 Jalapeno Pepper, finely diced
  • 1 Jar of Pimentos, drained well


  1. Combine together softened cream cheese, shredded cheese, mayonnaise, garlic powder, onion flakes, cayenne pepper, jalapeño, and pimentos.  Stir together until you have reached a smooth consistency and everything has been incorporated well.

Additional Info

Recipe Notes: This dip makes fabulous grilled cheese, like the best you've ever had!  It works great as a spread on burgers.  I serve my dip with sliced apples and veggie chips.
