Pick Your Pleasure Baked Oatmeal
My motto in life is “But First Coffee”. I am not a morning person At ALL, but unfortunately in order to get to the rest of the day, one must first experience mornings. Our family experiences mornings in two waves. The first wave involves getting the husband breakfast, his lunch packed, and sending him off to work.
I am then able to consume a cup of coffee. That coffee allows me to function through the second wave, which entails getting the children fed and on to the start of their day.
I love to cook. I love to cook breakfast food. I don’t like to cook breakfast food at breakfast time. Shortcuts that get a warm, nourishing, filling breakfast, in my family’s bellies, are greatly appreciated. This Pick Your Pleasure Baked Oatmeal is the perfect choice. It can be made ahead the night before or even better yet, it can be baked ahead and frozen in individual portions. The family can grab a slice and warm it in the microwave for a hot and hearty breakfast in minutes.
For this recipe there is a basic recipe, you can then customize your flavor pleasures. We never make just one pan. When you make this recipe, while all the ingredients are out, make one/freeze one. It will save valuable time on those mornings when your family is hurrying to get out the door.

|Blueberry Peach||To the base recipe add: 1 ½ Cup Peaches, 1 Cup Blueberries, 1 tsp. cinnamon, pinch of nutmeg, and 1 tsp. Almond extract|
|Carrot Cake||To the base recipe add: 2 Cups Shredded Carrots, ½ Cup Chopped Walnuts, 1 Cup Craisins, 1 tsp. Cinnamon, pinch of nutmeg, and 1 tsp. Vanilla|
|Apple Pie||To the base recipe add: 3 Apples (peeled and cubed), ½ Cup Walnuts, 1 tsp. Apple Pie Spice, and 1 tsp. Vanilla|
|Very Berry||To the base recipe add: 1 Cup Diced Strawberries, 1 Cup blueberries, 1 Cup Raspberries, 1 tsp. Cinnamon, ½ Cup Chopped Walnuts, and 1 tsp. Vanilla|
|Tropical Storm||To the base recipe add: 1 Can Pineapple Tidbits (drained really well), ½ Cup Chopped Macadamia Nuts, ½ Cup Shredded Coconut, 1 tsp. Cinnamon, and 1 tsp. Vanilla|
|Orange Cranberry||To the base recipe add: Zest of 1 Orange, 2 Cups Dried Cranberries, ½ Cup Chopped Walnuts, 1 tsp. Cinnamon, pinch of Nutmeg, and 1 tsp. Vanilla|
|The Elvis||To the base recipe add: 3 Banana’s Diced, 1 ½ Cup Chocolate Chips, ½ Cup Diced Peanuts, 1 tsp. Cinnamon, and 1 tsp. Vanilla|
- 3 Cups Quick Oats
- 1 Cup Brown Sugar
- 2 tsp. Baking Powder
- 1 tsp. Salt
- 2 Eggs, Beaten
- 1 Cup Milk
- 1 Stick Butter, Melted
- Preheat oven to 350. Spray an 8 inch baking dish with a non-stick cooking spray.
- To a large bowl combine the oats, brown sugar, baking powder, and salt. In a separate bowl combine eggs, milk, and butter; add to dry ingredients bowl and stir to combine. Stir in your flavor pleasure ingredients and mix to combine thoroughly. Pour batter into prepared baking dish and bake for 35-40 minutes.
- Top oatmeal with whipped cream, heavy cream, or maple syrup to put it over the top.
